Irene Matson has been wowing brides with her exquisite cake designs and has earned herself the reputation as Vermont’s finest cake designer.

What words best describe your style?
Clean, flowing, exquisite.

What motivates you the most?
The bride and groom and their enthusiasm.

How best would you advise a Bride and Groom to personalize their wedding cake?
To think about the things that they love and share, that they’ve chosen to represent themselves in their wedding style.

Who would you say is an iconic bride whose wedding cake you would have loved to design?
Ellen Degenres.

What do you love about working within the wedding industry?
The variety of opportunities to use and express my passion to create, decorate and help make each wedding couples day a memorable as possible.

What do you hate about working within the wedding industry?
Humidity.

What has been your proudest moment of your career so far?
Winning the 2010 and 2011 National Capital Area Cake Show, judged by my peers.

Who do you respect and admire within the wedding industry?
Colette Peters ,Ron Ben Israel and Sylvia Weinstock, all of whom elevated the wedding cake industry.

What does marriage mean to you in three words?
Friendship, trust, sharing.

Ideal wedding location where you like working?
Vermont has so many ideal spots. Here are a few – The Hildene, Inn at Round Barn, Equinox Pond Pavilion, Shelburne Farm, and Shelburne Museum.

Which season do you think is best suited to weddings?
Vermont is beautiful in all seasons, each with its own character, but personally the only time I’m not fond of is grey November and April.

What do you think makes a wedding most memorable?
Sharing time with your friends and family.

Buttercream or Fondant?
I love buttercream but I like the things you can do with fondant.

Favorite cake flavor?
Do I have to narrow it down to just one?? Almond Frangipane.

What are some popular trends in cake flavors and fillings?
Multiple cake flavors in a tiered cake with several different filings in each.

Favorite color combination?
Chocolate on Aqua, lavender/purple & green, turquoise & orange, black, white & red and the list goes on!

Essential item for a bride on her wedding day?
A smile and tissues!

Trend prediction for wedding cakes in 2012…
Clean lines with splashes of color.

Favorite cocktail?
Champagne…hands down!

What can’t you live without?
My husband Michael’s love and support.

A Sweet Bouquet by Jasper and Prudence

Jasper and Prudence creates a sweet bouquet with the intoxicating fragrance of hyacinth and a lovely color combination of soft pinks.  To create this spring bouquet, Tedd combined pale pink hyacinth, calla lily, sage foliage and dogwood branches tied with black velvet and finished with pearl button details.
